Smashed Cucumber Salad

Serves: 3-4

This simple cucumber salad is a great side to a noodle or rice dish.

Ingredients

6 Persian cucumbers or, 2 long English cucumbers

3 tbs tahini

2 tsp sesame oil

2 tbs chili oil

1-2 tsp sesame seeds

Handful of cilantro, for garnish

Green onions, for garnish (optional)

Salt and pepper, to taste


Instructions

  1. In a large mixing bowl, whisk together the tahini with 1 tbs of water, or until smooth. Add in your sesame oil, and mix again. Add in more water, as needed.

  2. On a cutting board, using the handle of your knife, smash the cucumbers until they break apart. Tear or cut those into bite-sized pieces. Place the pieces in a strainer/colander and sprinkle with a pinch of salt, toss, and let it sit for 8-10 minutes to draw out excess liquids.

  3. Give the cucumbers a quick rinse, pat dry them with a paper towel and add the cucumber into the mixing bowl and toss until well coated in the dressing. Taste test, and add salt and pepper as needed.

  4. Top off with sesame seeds, a generous amount of cilantro, and chili oil. Enjoy!
