Shanghai fried rice cakes can be substituted for chow mein noodles when you want to change things up. For those who are not familiar, rice cakes are tapioca-rice flour oval bites sized pieces that are best known for their chewy-goodness and can be found at your local Asian grocer.
Ingredients
~1 ½ - 2 cups of dried rice cakes, separated ahead of time
~1-2 tbsp vegetable oil
4-5 large shiitake mushrooms, sliced
~1 cup sliced Chinese napa cabbage
1-2 garlic cloves, finely chopped
½ cup green onions, chopped, for cooking, and for garnish
Sauce
1 tbsp soy sauce
½ tbsp dark soy sauce
½ tbsp oyster sauce
½ tsp sugar
Instructions
Combine the ingredients for the stir-fry sauce, mix well and save for later.
The next step can be timed to cook simultaneously, but if that seems too hard, you can start with one or the other.
Put a cast iron, or non-stick pan over medium heat. Add in 1 tbs of oil and throw in the garlic, mushrooms, cabbage and half of the green onions. Add more of anything as preferred. Then add in 1 spoonful of sauce and mix well. If it isn’t changing in color, you can add in more as needed. There tends to be more sauce than needed. Cook for 2-4 minutes until darker in color, and softer in texture. Turn down heat to low, or remove from heat until the rice cakes are cooked and ready to add in.
Heat a medium pot of water over high heat. When boiling, add in the rice cakes and cook for a few minutes according to package until soft and glossy in appearance (~5 min). Drain and rinse under cold water.
Put your pan back on the heat and add in the rice cakes. Sometimes they can stick to the bottom so add in a touch of oil as needed. Drizzle more stir fry sauce over the rice cakes, and fully integrate with the vegetables. Cook for 2-4 minutes, or until the rice cakes are darker in color, and are just starting to brown. You don’t want them to get fully crispy but you want them to have a little texture.
Remove from heat, add on more green onions for garnish. Serve immediately and enjoy!
