Mushroom Jam

Yields: 12-16 oz (1 mason jar)

This vegetarian spin on bacon jam is savory, filling, delicious and quick.

Ingredients

1-2 cups mushrooms, chopped

1 medium or large yellow onion, chopped

3 medium shallots, chopped

3 garlic cloves, minced

½ cup brown sugar

½ cup maple syrup

½ cup freshly brewed coffee

½ cup apple cider vinegar

¼ teaspoon red pepper flakes

Salt & pepper, to taste


Instructions

  1. Chop your mushrooms, onion, shallots and garlic,

  2. In a large skillet over medium heat, add in your olive oil. Add in your onions, shallots, sprinkle a dash of salt on them and let them sweat for 3 min. Cook for 15 minutes, making sure to stir often and until caramelized.

  3. Add in the garlic, mushrooms and saute for an additional 3 minutes or so.

  4. Add the syrup, apple cider vinegar, coffee, chili flakes and sugar. Mix well and let cook until it thickens. Taste and adjust for seasoning. Remember that this is a jam and should be sweet.

  5. Let it cool and it’s ready to serve on your next toast, or however you like it. Enjoy!
