Jammie Dodgers

Jammie dodgers may sound unfamiliar, but once you see a photo you’ll immediately recognize this British staple. These shortcut biscuits with jam in the middle are fun to assemble and even better to eat.

Ingredients

1 ⅓ cup unsalted butter, softened

1 ½ cups sugar

2 eggs

2 tbs milk

2 tsp vanilla

4 cups flour, plus more for rolling

2 tsp baking powder

1 cup strawberry jam

2 same shaped cookie cutters (one larger, one smaller)

Powdered sugar, for dusting


Instructions

  1. Preheat the oven to 375 degrees.

  2. In a stand mixer fitted with the paddle attachment, cream together your butter and sugar. Make sure you let it go until light and fluffy. Then beat in your eggs, milk and vanilla.

  3. In a separate medium bowl, stir together the flour and baking powder. Slowly incorporate your dry ingredients into your wet ingredients. Cover and refrigerate the dough for at least 1 hour.

  4. Take a baking sheet, and line it with parchment paper.

  5. On a lightly floured surface, roll out your dough into a ¼ inch thick slab. Cut out all large shapes, and then once you’ve used up your dough, cut out half of those shapes with the small shape and remove the middle.

  6. Bake for 7-10 minutes, and remove from the oven just before they turn golden brown. You don’t want a crispy finish.

  7. Cool for 10 minutes, then place on a cooling rack.

  8. Take your large cookie shape and spread jam over the whole shape. Take a large shape with a smaller cut out and place it on top. Repeat until all cookies are used.

  9. Generously sprinkle with powdered sugar. Enjoy!
