Corn Salad

Simple, fresh and full of flavor.

Ingredients

2-3 ears of corn

¾ lb mini cucumbers

¾ lb grape/cherry tomatoes

2 avocados


Olive oil

Lemon juice

Salt & pepper

Green onions, to garnish


Instructions

  1. In a pot of boiling water, throw in your corn and cook. You can also cook on the grill, or however you prefer. Corn the cob, and throw all the other ingredients into a large mixing bowl.

  2. For the dressing, add as much as needed to taste.

  3. Gently mix, dress, and enjoy!
