Chili Oil

Makes: ~4 cups

Prep Time: 15 min

Cook Time: 30-60 min


Chili oil is easy to make, fully customizable and a pantry staple. They also make for great gifts!

Ingredients

Infused Oil

3 cups neutral oil

5 star anise

1 cinnamon stick

2 bay leaves

2 tsp cloves

3 tbs Sichuan peppercorns


Pour Over

1-inch fresh ginger, minced

3 cloves garlic, minced

2 shallots, minced

Green onions, white part only, minced

1 ¼ cup Sichuan chili flakes

2 tsp salt


Instructions

  1. In a medium to large saucepan, add in your oil, aromatics and place on medium heat. Once the oil is between 225-250° F, or you start to see small bubbles slowly rising, it is recommended to reduce the heat. Let the aromatics infuse for a minimum of 30 minutes, or up to 1 hour.

  2. While the oil continues to infuse (keep a watchful eye on it), prepare a large pour over and heat proof bowl. Place your chili flakes, ginger, garlic, shallots, and green onions in the center.

  3. Remove the aromatics from your hot oil (or strain it) and pour it over the chili flakes mixture. You should hear and see them sizzle for a minute or two. You can carefully and slowly stir to evenly distribute the heat of the oil. Then stir in the salt, and allow the mixture to cool. Store in airtight containers in the refrigerator, and enjoy!
