Fried rice is a classic Chinese dish that everyone can enjoy! It is totally customizable, but there are a few basics that we like to stick to such as day old rice, green onions, garlic, peas and carrots, and eggs. What matters when making fried rice, is the order in which you cook the items. Give it a try today!
Ingredients
2 ½ cups of white rice, cooked
1 medium boneless, skinless, chicken breast, cubed
1 clove of garlic, chopped
3 eggs
1 ½ tbs of oil for frying
½ cup of green onion, chopped
½ cup of frozen peas & carrots, microwaved and drained
3 pieces of lap cheong (Chinese sausage), diced
White pepper to taste
Soy sauce to taste (about 2-3 tbs as a base)
Process
In a large frying pan, preferable non stick, place over medium high heat.
Cook the chicken separately, and then the sausage, and set them both aside to later toss in.
While the meat cooks, microwave the peas & carrots, and drain the excess water.
Using the same pan, and the sausage fat, add in the garlic and green onions. Then add in the peas & carrots, to help remove some of the retained liquid.
Once it becomes aromatic, add in the rice and make sure there aren't clumps of rice.
Add the meat back in at this stage, and fry for 1-2 minutes.
Move the rice to the side of the pan, or form a circle in the middle, and add in the eggs.
Let the egg cook a little more than halfway before incorporating the rice into the egg mixture in the pan. A good way to test, is to push the eggs to the side to allow the uncooked egg to touch the pan, and to get a good feel of how cooked the eggs are.
Once everything has cooked together for a little, you can add the white pepper. It is up to you how much you would like to add.
Drizzle about 2-3 tbs of soy sauce on top of everything, and stir it all together. Taste the rice in between each tbs to test what your salt preference is.
You are now ready to plate and serve! Enjoy!
