One-Pot Pasta with Ricotta


After a busy holiday month, we thought it would be best to start off 2020 with an easy recipe, and one with only a few simple ingredients. Sometimes the best dishes, are the most simple and fresh. This dish is full of cheese-y goodness, and on the birght side, you will have minimal clean up to do.

Serves: 4

Total Time 25 min

Ingredients

1 lb penne

1 cup ricotta (8 oz)

1 cup Parmesan

1 tbs lemon zest

¼ cup lemon juice

¼ cup fresh basil, for garnish

Red pepper flakes, for garnish

Salt & pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the packages instructions, or to whatever preparedness you prefer. Drain the pasta, but first make sure to save 1-2 cups of pasta water.

  2. In the same large pot, make the sauce by adding the ricotta, parmesan, lemon juice/zest, salt and pepper, and stir until it is well incorporated.

  3. Add 1/2 cup pasta water to the sauce and stir well until it is smooth. Add the pasta back into the pot and keep stirring until the pasta is well coated. Add pasta water as needed for the sauce consistency.

  4. Serve and garnish as preferred.

  5. Enjoy!
