Corn Salsa


Serves: 2-3

Prep Time: 15 min

A super quick, simple, and packs a powerful punch, this corn salsa will have you wanting more. Seriously. Maybe you should double the recipe, we sure wish we did. Serve this as a side dish and appetizer at your next get together. 

Ingredients

1 medium poblano chile pepper, seeded

1 cup frozen corn 

1 small jalapeno pepper, seeded & chopped

4 tablespoons chopped fresh cilantro

3 tablespoons chopped red onion

2-3 tablespoons fresh lime juice

1/2 teaspoon sugar

Kosher salt

3 teaspoons extra-virgin olive oil

Directions

  1. Preheat cast iron, or grill to medium high. Brush the poblano pepper with 1 tsp olive oil and grill until charred but still firm, approx 5 mins. Let cool for a couple min, peel and finely chop. 

  2. Now mix the corn, poblano, jalapeno, cilantro and red onion in a medium sized bowl. Stir in the remaining 2 tsp olive oil, lime juice, 1/2 tsp salt and sugar.

  3. Enjoy!
