Savory Kale & Mushroom Crepes

Crepes, which are loved by many, are a thin French pancake that are fried lightly on both sides. They can be served sweet or savory style, with any delicious mixture of fillings. We decided to go with a simple kale, mushroom & cheese filling. You can play around with meat, vegetables, eggs, and cheeses for savory. For a sweet crepe, they usually consist of nutella, strawberries, bananas, and whipped cream. It is entirely up to you!

Ingredients:

For Crepes:

  • 1 ½ cup all purpose flour

  • 1 cup cold water

  • 1 cup cold milk

  • 4 eggs

  • ½ tsp Salt

  • 4 tbs melted butter

For Filling:

  • 2+ tbs butter

  • ½ tsp Dried Thyme

  • Kosher Salt, to taste

  • 6-8 oz mushrooms, chopped

  • 2 cups baby spinach or kale, torn or cut into smaller pieces

  • ⅓ cup Parmesan cheese

  • ⅓ cup Goat cheese

  • 1 large garlic clove, minced

  • 1 tsp Herbs de Provence

Instructions:

  1. Place liquids, salt, egg, flour, and butter into a blender. Mix until smooth.

  2. Using a medium skillet, and on medium heat, melt 1-2 tbs of butter. Make sure to add the herbs, garlic, salt, and mushrooms and saute for 2 minutes. Then add the bits of kale, adding more butter as needed. Continue to saute until the kale has cooked down. Remove the pan from the heat and set aside for assembly.

  3. In another small or medium nonstick skillet, heat it to medium. Use about 1/3 cup of batter in a pan at a time, or until the bottom of the pan is evenly coated. You may spin the pan as you like so that the batter is evenly distributed and there are no holes in the crepe. Cook for about 1 to 2 min, and flip when lightly brown on one side. We recommend using a plastic spatula so that it is easier to check the crepe, and separate it from the pan.

  4. Once you have flipped the crepe, spring a little bit of both the parmesan cheese and goat cheese on one half of the crepe. Add one medium/large spoonful of the vegetable filling into the same side / on top of the cheese. Make sure that it is evenly spread on the half of the crepe. Once you have evenly distributed the filling, using your spatula, fold the unfilled side over to form a taco like shape. If you'd like, you may fold it again.

  5. Set aside on a plate and serve! If it takes longer than you expected to use all the batter, you can always reheat the crepes on the pan, or in the oven.
