Pesto is a summer favorite of ours. Super easy to make, and with minimal ingredients, you'll find yourself with a filling & tasty dish best served in large portions.
Ingredients
2 cups uncooked fusilli pasta,
10+ cherry tomatoes, halved
Salt & pepper, to taste
½ - 1 cup of store bought or homemade pesto:
2 cups basil
½ freshly grated parmigiano-reggiano
½ cup of olive oil
⅓ pine nuts or walnuts, chopped
4 garlic cloves
¼ tsp salt
¼ tsp pepper
Process
Prepare the pesto mixture by adding it to a small food processor. Chop and pulse until fully incorporated.
Cook the pasta per the package instructions, drain them into a colander and finish with a rinse of cold water to prevent further cooking.
Halve the cherry tomatoes and set aside. At this step you can add as many tomatoes as you like. We like to add as many as we can for maximum flavor & to prevent monotony of only having pasta.
Throw the pasta, ½ cup of pesto mix (or more if needed) , and tomatoes into a large bowl and mix well. Add extra salt & pepper to taste, and feel free to garnish with extra basil & pine nuts if wanted.
