Ceviche, originally from Peru, is a popular appetizer that incorporates seafood (usually white fish or shrimp), red onion, tomato, cucumber, cilantro, chiles and is cooked in lime juice. This recipe is super low maintenance, quick to make and will be a fan favorite at your next dinner party. Just pair it with tortilla chips!
Ingredients
1 lb raw shrimp, peeled, deveined & tail removed
1 cup freshly squeezed lime juice
1 cup tomato, finely chopped & seeded
1 cup cucumber, peeled & seeded
1/2 cup red onion, finely chopped
2 serrano chiles, seeded, deveined & minced
1/2 cup chopped fresh cilantro
Kosher salt, for seasoning
Process
Chop the shrimp into small pieces and place in a large mixing bowl. Add 1/2 cup of lime juice and let it cook (rest) for 30 minutes.
In a separate large bowl, mix the vegetables and the rest of the lime juice.
Combine the two into the bigger mixing bowl and mix well.
Season with a pinch of salt and serve with tortilla chips.
