A very simple and quick recipe that is perfect for summer is our favorite, carbonara. Carbonara is an Italian dish that utilizes salted water, spaghetti, garlic, egg yolks, cheese, pancetta or guanciale. In less than 30 minutes, you'll have a hearty meal worth sharing.
Ingredients
6 large free-range egg yolks
1.5-2 cups grated Parmesan cheese, plus extra to serve
8 oz piece of pancetta, minced
1 package of spaghetti
2-3 large cloves of garlic, minced
extra virgin olive oil
Process
Bring a large pot of moderately salted water to boil. You can taste the water to assess for salt. We like to use about 2-3 very generous pinches of salt.
In a large frying pan, heat the vegetable oil over medium heat. Cut the pancetta or guanciale into small pieces, and fry with the garlic in the oil until crisp.
As the meat finishes cooking, add the pasta to the boiling water and boil for 3-4 minutes, or until al dente, or to your personal preference.
Drain the pasta from the pot (making sure to save 1 cup of pasta water in a measuring cup), and place in the skillet.
Remove the pan from the heat and toss the spaghetti with the pancetta & garlic.
Whisk together the egg yolks, some cracked pepper and about 1 cup of parmesan cheese in a mixing bowl. Pour the mixture over the pasta/skillet and stir continuously, slowly adding pasta water in small increments to get the consistency you like.
Taste for salt & pepper and add parmesan cheese as needed.
Plate, garnish with more cheese, some basil (optional), and enjoy!
