Spring forward with this fresh and simple shaved asparagus salad. Pair it with a light dressing and garnish with prosciutto and parmesan for an extra kick.

Ingredients
2 oz prosciutto, diced
1 lb large asparagus
1 cup coarsely grated Parmesan cheese (3 oz)
3 tbs fresh lemon juice
1 cup Italian parsley, chopped
1/4 cup + 1 tbs extra-virgin olive oil
Salt & freshly ground pepper
Directions
In a medium saute pan, heat up 1 tbs of olive oil over medium heat. Place prosciutto in the pan & cook until golden & crisp. Once finished, scoop it out of the pan and set aside for later assembly.
Using a vegetable peeler, shave the asparagus into long, thin strips & place in a large bowl.
In a small bowl, mix the Parmesan with the lemon juice, parsley, and olive oil. Add to the asparagus and toss to coat. Season the salad with salt and pepper, top with the crispy prosciutto and serve at once.
