An English Muffin is a classic bread choice for a breakfast sandwich. This week we share how to make the muffin from scratch, and what to put into it to make a delectable sandwich. This sandwich is very simple, full of deli meat, and topped with a fried egg.
Yields: 16 muffins Prep Time: 25 - 40 mins Cook Time: 25 - 45 mins Ingredients 1 3/4 cups milk, microwaved for 1-2 min 3 tbs butter, softened 1 1/4 tsp salt, to taste 2 tbs sugar 1 large egg, beaten 2 tsp instant yeast
4 1/2 cups King Arthur Unbleached Bread Flour Semolina or farina, for sprinkling on the pan Instructions
Preheat your oven to 350 degrees.
Combine all of your ingredients (except the semolina/farina) in a mixing bowl, or standing mixer bowl. Beat the dough using the flat beater paddle until it starts coming away from the sides of the bowl. Pause and use a spatula to help pull the dough away from the bowl. Continue to mix as needed. Scrape the dough into a ball and cover the bowl with a damp towel. Let rise for 1 hour.
Prepare your cast iron or griddle. Using a paper towel, cover the surface of the cast iron with a small amount of vegetable oil (about ½ tbs). Generously sprinkle the pans surface with semolina or farina.
Divide the dough into 16 pieces on a lightly floured surface as this dough is more delicate than firm. Shape each piece into a smooth ball, then flatten the balls until they're about 3 ½ inches in diameter. Make sure to sprinkle the tops of the muffins with additional semolina or farina.
Cook the muffins over low heat for 7 - 15 minutes per side, until it resembles a golden brown crust. Once both sides have been browed, throw it onto a baking sheet and let finish in the oven for about 10 minutes.
Remove from the oven and let cool before eating or cutting.

Breakfast Sandwich Recipe Yield: 6 servings Prep time: 15 min Cook time: 20 min Ingredients 6 English muffins, split
12 slices Canadian bacon
1 package of bacon 6 slices cheddar cheese 6 large eggs Directions
Preheat oven to 350 degrees.
Cut 6 english muffins in half and toast both sides in the oven on a baking sheet.
Cook bacon until crispy, and heat up the Canadian bacon on both sides over medium heat. Throw it into the oven on a baking sheet to keep warm while the rest of the sandwich is being prepared.
On a large saute pan over medium heat, add a drizzle of vegetable oil and fry up 6 eggs, making sure to keep the yolk undercooked, and a nice browning and crisping of the egg on both sides.
Throw a slice of cheddar cheese on the bottom half of all six muffins. Let sit in the oven for an addition 2-3 minutes, or until melted.
Remove the baking sheet from the oven and assemble your sandwich. The order in which we assembled was cheese slice on the bottom half of muffin, canadian ham, 1-3 pieces of bacon, fried egg and lastly a buttered top half of the muffin.
Serve hot, and enjoy!
