Ingredients
2 tbs mirin
2 tbs sake
¼ cup white miso
2 tbs sugar
4 Japanese eggplants
1 tbs vegetable oil
2 tsp toasted sesame seeds
⅓ cup sliced green onions
Process
Set your oven to broil.
Combine the sake, miso, mirin and sugar in a bowl and stir until the ingredients are well incorporated.
Remove the top of the eggplant, and cut it down the middle to halve, halve the slices again, this will give you thin & more long strips to serve.
Rub eggplant slices with vegetable oil.
Using a knife, make score marks on the top surface.
Quickly throw into the broiler for 10-12 minutes,
In a medium pan over medium high heat, cook the slices for about 1 ½ minutes flip and repeat the process.
You can test if an eggplant is cooked by poking it with a fork, it should be easy and soft.
Set aside to cool on a plate.
Spread the miso glaze on the surface of the eggplant slices. Throw into the broiler again until glaze has caramelized, which is about 4 minutes.
Transfer to a serving platter, sprinkle with sesame seeds (optional) and green onion slices.
