The ultimate treat yourself dessert is time consuming, yet totally worth it. Our truffle recipe is simple, affordable and completely customizable. These bad daddies are perfect to gift, or save them to pair with a nice glass of red wine after a long day of work.
Ingredients
10-12 oz good quality dark chocolate, 70% cacao solids
1 ¼ cup heavy cream
3.5 tablespoons unsalted butter
Optional
1 cup nuts, chopped (optional)
8-10 oz dark chocolate for outer layer (optional)
Process
Put the cream and butter into a saucepan and heat gently until the butter melts and the cream reaches simmering point. Remove from heat, then pour over the chocolate. Stir the chocolate and cream together until you have a smooth mixture. Cool and chill for at least 1-2 hours.
To shape the truffles, use a spoon to scoop up balls of the mixture, roll the truffles between your hands into ball shapes, and then drop the truffles onto parchment paper. Chill for 30 minutes.
Set up your toppings into small bowls for dipping for later use (dark chocolate, cocoa mix, chopped walnuts, etc).
To cover in chocolate, melt dark or white chocolate in a double boiler, and stir until it is smooth. Allow chocolate to cool slightly (5 min). With a fork, pick up one truffle at a time and hold over the bowl of melted chocolate. Spoon the chocolate over the truffle until well-coated. Place on the baking tray, then chill for another 30 minutes.
If you wish to use different toppings, roll the uncovered truffle into chopped nuts, or roll in cocoa mix, and set aside in the freezer on parchment paper. Store in the fridge in an airtight container for 3 days, or freeze for up to a month. Keep in the fridge or freezer until you’re ready to eat them.
