This is a great appetizer to make for a small dinner party, or if you just want a delicious snack. We got our inspiration from a local Italian Restaurant, Bar Del Corso, on Beacon Hill. The flavors from the pear, gorgonzola, prosciutto, caramelized onions and the toasted/seasoned bread pack a punch of sweet/salty that are sure to tickle your taste buds.
Ingredients
Bread loaf of your choice
2 cloves of garlic
2 large red onions
A splash of red wine
2 medium red pears, ready to eat
0.5 lb block of gorgonzola cheese
3 oz Prosciutto
Olive oil to drizzle
Salt & pepper to garnish
Process
Slice your bread loaf to your preferred thickness, paint with light olive oil and toast in the oven at 350 degrees for approximately 10 minutes.
While the oven preheats and your bread is toasting, start slicing your red onions. With a generous drizzle of oil and set to medium/high heat throw the onions in a large pan to begin the caramelization process. Stir every 3-5 min, this process may take up to 30 minutes as you will want the onions to become translucent first and later a golden/dark brown color. Once the color is dark brown (ish), add a splash of red wine to the onions, stirring constantly for an additional 3-5 minutes or until done.
Let the slices cool slightly, and rub garlic onto each piece for extra flavor.
Rinse and thinly slice your pears and set them aside. You can also peel them as an option.
Thinly slice from the pointy side and parallel to the back slice of cheese, and set them aside.
Hand rip your prosciutto into smaller & more relaxed in appearance pieces, and set them aside.
For each bread slice, add caramelized onions on the bottom, the pear slice next, top with cheese, cover with prosciutto, drizzle with oil olive and garnish with salt & pepper
