French Green Beans


Another quick and fun green bean recipe to add to the books. This dish is perfect as an appetizer or entree for the holidays. 

Yields: 8 -10 servings

Prep Time: 15 min

Ingredients

3 tbsp butter

1 ½ cups coarse sourdough breadcrumbs, fresh or store bought

½ cup sliced almonds

2 tsp of thyme

2 cloves garlic

¼ cup chives

1 lb green beans

2 tbsp butter

Directions

  1. Melt butter in a medium saucepan over medium-low heat.

  2. Add breadcrumbs and almonds and cook, stirring constantly, 5 minutes. Stir in garlic and continue to cook 2 more minutes or until bread is golden and almonds are toasted and fragrant.

  3. Remove from heat; stir in chives and season with salt and pepper to taste.

  4. Toss 1 1/2 pounds of warm steamed green beans in 2 tablespoons butter or olive oil; season with salt and pepper to taste.

  5. Transfer to a platter and sprinkle generously with breadcrumbs.
