Matcha Truffles


It's that time of the year again where the gift of giving is encouraged. We recommend gifting edible gifts, as nothing makes us happier than dessert. If you like green tea lattes, then these are the truffles for you. Creamy, sweet and just a tad bitter from the matcha, these will satisfy any sweet craving.

Yield: ~12-14 truffles

Prep Time: 5-10 minutes

Total Time: 2.5 hours

Ingredients

1/3 cup heavy cream

2 tablespoons butter

1/8 teaspoon salt

2 tablespoons matcha, split, sifted

10 ounces white chocolate, roughly chopped

1 tablespoon hot water (if needed)

2 tablespoon powdered sugar, sifted

Directions

  1. In a saucepan, warm the heavy cream and butter on low heat until the butter has melted. Take off the heat then add in the salt and 1 tablespoon of the matcha powder. Whisk until all the lumps are out. Set this aside.

  2. Fill another small saucepan about half way full with water. Heat on the stove on medium high heat with a heatproof glass or metal bowl on top.

  3. Once the bowl starts the heat up, add in the white chocolate. Scrape down the sides and mix the white chocolate until all of it is melted. Take off the heat immediately.

  4. Stir in the cream and matcha mixture into the melted white chocolate. This mixture might seem a little separated, keep mixing until smooth. If the consistency is still not completely smooth then add 1 tablespoon of hot water and mix until smooth.

  5. Cover the truffle mixture with plastic wrap and place in the fridge for at least 2 hours or until cooled and set.

  6. In the meantime, mix together the remaining 1 tablespoon of matcha powder and powdered sugar in a small bowl and set aside for later.

  7. Using a small cookie dough scoop, scoop ping pong sized balls of truffles. Roll lightly between hands until smooth and round. Then lightly roll around in the powdered sugar and matcha powder mixture until coated. Decorate with one dried goji berry on top. Repeat until all of the truffle mixture is gone.

  8. Keep the truffles refrigerated until needed.
