Garlic Green Beans with Bacon & Feta


With the holidays coming up, we wanted to continue to share our favorite side dishes for the next few weeks that we believe are affordable, relatively fast, and quite delicious. Nothing says fall like Thanksgiving sides, soups, and warm drinks!

Yields: 2-3 servings

Prep Time: 15 minutes

Cook Time: 20 minutes

Ingredients

3/4 pound fresh green beans, trimmed

5 slices bacon, diced

2 medium shallots, diced

5 cloves garlic, minced

3 tablespoons feta cheese, crumbled

Instructions
  1. Boil green beans for 2 minutes.

  2. Drain and rinse with cold water for a minute. Set aside.

  3. Add diced bacon and shallot to a 3 quart or larger pan over medium heat.

  4. Cook until crispy, about 10 to 15 minutes, stirring occasionally.

  5. Add green beans and minced garlic to the pan.

  6. Stir as you mix everything together, cooking for a few minutes.

  7. Serve and top with feta cheese.

  8. Enjoy!
