Garlic Herb Smashed Potatoes


Need a last minute, and amazingly flavorful appetizer for Thanksgiving? We have just the recipe for you. Using only five easily accessible ingredients, your taste buds will have never been happier!

Prep time: 5 mins

Cook time: 50 minutes

Serves: 6-8 people

Ingredients

1.5 lbs. baby gold potatoes

2 tablespoons olive oil

4 garlic cloves, minced

2 1/2 tablespoons grated parmesan cheese

2 teaspoons fresh thyme, chopped

2 teaspoons fresh rosemary, chopped

Salt and pepper to season

Instructions

  1. Preheat your oven to 450 degrees.

  2. In a small bowl, add garlic, parmesan cheese, fresh thyme and rosemary. Mix well and set aside.

  3. Add the potatoes to a pot and fill it with water until the potatoes are covered. Bring water to a boil, reduce to simmer and cook for 15 minutes (or until tender).

  4. Drain the potatoes and place on a baking sheet. Let rest for 5 minutes in the freezer.

  5. Using the back of a wooden spoon, your palm or the bottom of a bottle, smash the potatoes.

  6. Drizzle potatoes with olive oil, sprinkle with sea salt and pepper. Bake for 15 minutes.

  7. Remove potatoes from oven and flip. Bake for an additional 15 minutes.

  8. Remove the pan of potatoes from oven and sprinkle each potato with the parmesan garlic herb mixture.

  9. Enjoy!
