Granola


Do you have a ton of yogurt & fruit lying around with nothing to eat it with? Did you need to make a snack to bring to school or work? We have the recipe for you! This easy, quick & cheap recipe will be just the thing you need. Within 25 minutes you can have a fully customizable snack to take with you on your next hike, work, or even to gift to a friend. Whatever floats your oat!

Yields: 3-4 cups

Prep Time: 15 min

Cook Time: 25 min

Ingredients:

2 cups rolled oats

¾ cup nut of choice (walnuts, pecans, almonds macadamia), roughly chopped

½ cup seed of choice (sunflower, pumpkin, chia, flax)

1½ teaspoon cinnamon

½ teaspoon salt

¼ cup butter (coconut oil can be substituted for a vegan version)

¼ cup maple syrup

1 teaspoon vanilla extract

Optional: dried fruit

Directions:

  1. Preheat oven to 350 degrees and prepare a sheet pan with parchment paper.

  2. In a small bowl, combine the oats, nuts, seeds, cinnamon, and salt and stir to combine.

  3. In a small saucepan, melt the butter over medium heat. Once melted, turn off the heat and add in the maple syrup and vanilla.

  4. Pour in the butter mixture into the oat mixture and stir to coat. Place mixture on the sheet pan and spread into an even layer.

  5. Bake in the oven for about 25 minutes, making sure to stir the granola every 5-10 minutes. The granola is done when the oats are golden brown. After taking the granola out of the oven, it will continue to crisp as it cools. This would also be the point when the dried fruit can be added.

  6. Enjoy on top of your favorite yogurt, fruit, or on it’s own for a healthy snack!
