Chicken Adobo


This simple & few ingredient dish is perfect for you if you have a couple hours on hand. Let it marinate for 2 hours, and throw it all together in about 40 minutes. The flavor of the chicken, the crispiness of the skin, the spiciness of the pepper, and all of it topped on a hot plate of rice, it is sure to wow your taste buds!

Serves: 2-3 Prep time: 2 hours Cook time: 45 mins Ingredients 2 lbs. chicken thighs, skin on, bone in 3 pieces dried bay leaves 2 tbsp whole peppercorns 8 tbsp soy sauce 8 tbsp vinegar 7-8 cloves garlic, crushed 2 cups water ¼ cup vegetable oil ½ tablespoon white sugar Sprinkle of salt Instructions

  1. In a large container, combine soy sauce, garlic & then marinate the chicken for at least 1-2 hours.

  2. Place oil in a pan over medium/high heat. Add the marinated chicken in & cook on both sides for about 7 minutes each, or until crispy & brown. Pour-in the remaining marinade and add 1 cup of water. Bring to a boil, and cover.

  3. Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until the chicken is tender, and the water has formed a more solid consistency.

  4. Add the vinegar, stir & cook for 10 minutes, adding another cup of water as needed. Check for the consistency of the sauce. You don’t want it to be too soupy, but to have more of a thicker sauce texture after cooking it down. Add sugar, and salt. Stir and remove the pan from the heat.

  5. Serve hot with rice!
