Ingredients
For the blackberry syrup:
1 cup water
¾ cup sugar
8 oz fresh blackberries, save a few for garnish
For the drink:
4 mint leaves torn
2 oz blackberry syrup
½ oz lime juice
1 ½ oz white rum
2 oz club soda

Process
Add the water, blackberries and sugar into a saucepan. Over medium heat, bring to a boil. Once it starts to boil, reduce the heat to low/medium at let simmer for about 10 min.
Remove the pan from the heat and using a potato masher, mash the berry mixture.
Let the mixture cool for 15 minutes and push the mixture through a sieve to remove the seeds.
Store simple syrup in the refrigerator for use, and up to 2-3 weeks.
In a glass, add torn mint and muddle lightly. Add simple syrup, ice, lime juice, and rum. Stir and combine well. Top off the drink with the club soda and garnish with mint, lime, and berries.
