This recipe is for those who enjoy doing arts n craft & like to play with their food. It is more difficult than anticipated, but truly adorable when completed.

Yields: 6-8 spam musubi

Prep time: 30+ minutes

Cook time: 30 minutes

Ingredients

1 1/2 cup dry sushi rice

1 container of SPAM

1 package of sliced white cheese, recommended gruyere or provolone

1 package of nori sheets

Sauce

1/8 cup soy sauce

1/8 cup mirin

1/8 cup sugar

  1. Cook the rice to the package directions & set aside to cool.

  2. Jiggle spam out of the container, turn on it's long side and slice 1/2 inch thick slices.

  3. On a non stick pan over medium high heat, fry the spam until each side is slightly golden.

  4. Set aside onto paper towel to remove excess oil.

  5. Cut the spam to give it two ears and a forehead (see pictures).

  6. Cut out slices of cheese to make any face & belly designs that you like.

  7. Cut out nori into eyeball shapes and belly markings that you like.

  8. In a small sauce pan over medium heat, make the sauce by mixing soy sauce, mirin & sugar. Let simmer until sauce thickens and keep warm until assembly.

  9. Using your clean & empty spam container, line with plastic wrap and use as a shaping tool for the rice.

  10. Using a spoon, scoop up the rice and fill the bottom 1' inch of the spam container, squash down the rice to compact into shape.

  11. Repeat this process until all the rice is gone.

  12. To assemble the musubi, place the totoro bodies on top of the rice and bind with the sauce.

  13. Place the shapes and eyes as you like on top of the bodies.

  14. Serve warm & enjoy!

Tips!

  1. A piping tip is a good tool to cut out the eye shapes

  2. Kitchen scissors are best for cutting the nori

  3. BE PATIENT

  4. Don't let the sauce get cold or it will carmelize
