Traditional Jewish Latkes


Happy Holidays and Happy Hanukkah! Enjoy this festive, classic Jewish take on hash browns and top with sour cream and/or applesauce. As Merle says "Latkes express the essence of Hanukkah!"

Prep Time: 30 min

Cook Time: 2-3 minutes per latke

Serves: 3-5 people

Ingredients

3 medium potatoes

1/2 yellow onion

1/2 cup of green onions, green parts only

1 egg

1/4 cup matzo meal, use as a binding agent

Olive oil

Salt & Pepper as needed

  1. In a mixing bowl grate potatoes, onions, and green onions together. You can use a food processor for a quicker grate.

  2. Squeeze out all excess water from the potatoes and onions.

  3. Add the eggs, salt & pepper, and mix well.

  4. Add the matzo meal depending on how wet your mixture is, add more as needed.

  5. Take a spoonful, and with your hands, flatten the mix in your hand.

  6. Be generous with the oil, and fry each latke until each side is a light golden brown.

  7. You may have to continuously add oil to ensure an even fry.

  8. Place onto a plate with a paper towel to drain the oil.

  9. Serve with sour cream & apple sauce.
