Purple Sweet Potato Pie


And just like that we are officially in the holiday season and with the holidays comes lots of desserts, specifically pie. If you're like us, we're always curious of other kinds of pie that can substitute the famous pumpkin pie. While this pie may be out of the ordinary looking, I promise that you will love how seasonally flavored this is. So make a statement at your next dinner party, potluck, Thanksgiving dinner and bring this purple pie to entice everyone. Feel free to top it with whipped cream or serve with some vanilla bean ice cream!

Yields about 8 servings

Prep time: 20 minutes

Cook time: 3 hours

1.5 lb purple sweet potato (about 2 cups pureed)

¼ cup butter, softened

¼ cup sugar

¾ cup brown sugar

2 eggs, beaten

1 teaspoon vanilla extract

¾ teaspoon ground cinnamon

¼ teaspoon ground ginger

¼ teaspoon ground nutmeg

⅛ teaspoon ground allspice

½ teaspoon salt

¾ cup canned coconut milk

2 unbaked pie crusts

  1. Preheat oven to 350 degrees.

  2. In a pie dish, place in the prepared pie crust in the dish and crimp the edges of the pie. Set aside for later.

  3. Using a large pot, add in enough water to cover the sweet potatoes. Place the pot over high heat and bowl the potatoes until a knife can easily be inserted, this should take about 20-30 minutes. Once done, drain the potatoes and peel the skin. Place peeled potatoes in a bowl and mash until most of the lumps are gone, using a food processor works best and gets the smoothest texture. Set aside.

  4. In a stand mixer, beat butter, and both sugars together until creamy. Add in the eggs, vanilla, cinnamon, ginger, nutmeg, allspice, and salt. Beat in the coconut milk and the sweet potatoes. Pour mixture into the prepared pie dish.

  5. Optional: Using a leaf cookie cutter, cut out leaves from the second pie crust and place on top of the pie.

  6. Place the pie in the oven and back for about 1 hour or until the filling is firm. You may need to cover the edges of the crust with some foil if they are getting too dark.

  7. Once done, let the pie cool slightly and served warm with whipped cream if desired.
