Sweet Potato & Caramelized Onion Pizza


Everyone loves a good pizza for a snack or even for a meal. This recipe is pretty simple, quick, and good for groups of 1-3 people.

Yields: 1 - 3 servings

Prep time: 30 - 40 min

Cook Time: 10 - 20 min

2 large sweet onions, peeled & thinly cut

2 tablespoons butter

2 Trader Joe’s Plain Pizza Dough, or Garlic

15 oz of ricotta cheese

3-4 sprigs of fresh thyme

½ tablespoon olive oil

3 oz feta cheese

Kosher salt

  1. Preheat oven to 450 degrees.

  2. Take Trader Joe’s Plain Pizza Dough out of the fridge and set on top of a light layer of flour on a cutting board.

  3. Knead for 1-3 min, roll out into a circle, or whatever shape you choose & let rise for 20 min.

  4. Put in the oven for 5-8 min and let cool. Set aside for later.

  5. Melt butter over medium heat & add onions.

  6. Add a pinch of salt and then stir onions every few minutes, until ions are caramelized, they will be translucent and brown/clear in color.

  7. Mix ricotta cheese, half of the thyme leaves, and the olive oil together. Spread half this mixture over the flatbread and add half of the onions on top.

  8. Sprinkle a little salt and olive oil over the first layer of spread.

  9. Use a knife or peeler to peel pieces of sweet potato and place on top, equally around the flatbread.

  10. Intermittently spread sweet potato ribbons and feta cheese on top, sprinkle remainder of thyme leaves on top and back for 5-10 minutes, or until potatoes have slightly browned.

  11. Remove from the oven, drizzle more olive oil and add another sprinkle of salt.

  12. Optional: drizzle balsamic & any spice on top to pack a punch of flavor!
